Food As Medicine: Egg Roll in a Bow

Ingredients

1 tbsp oil
1 small onion
1 lb ground turkey
1 head cabbage
2 carrots
2 tbsp low-sodium soy sauce
Optional: 2 tbsp chopped cilantro and/or peanuts

Directions

Step 1: Heat oil over medium heat.

Step 2: Dice onion, then cook for 5 minutes until soft and translucent.

Step 3: Add ground turkey, breaking it into small pieces and cook until no longer pink.

Step 4: Shred cabbage and carrots, add to skillet with soy sauce. Stir to mix. Cover and cook for 10 minutes.

Step 5: Uncover and cook 5 more minutes.

Step 6: Top with peanuts and cilantro if desired. Serve and enjoy!
